Baked Brie with Cherry Tomatoes and Basil Pesto

INGREDIENTS:

  • 2-3 cups of grape tomatoes, or any other small tomatoes

  • 1 small brie cheese (about 16 oz), with the top crust cut off

  • 6 oz of basil pesto, divided

  • Salt and pepper to taste

  • Tostitos Scoops! (to serve with)

TO MAKE:

Preheat oven to 400F.

Place tomatoes in an oven-proof shallow baking dish.

Mix tomatoes with 1 tbsp of basil pesto. Place brie in the middle of the dish, pushing tomatoes to the side. Sprinkle tomatoes with some salt and pepper, to taste. Top the brie with the rest of the basil pesto.

Bake in the oven at 400F for about 25-30 min. Or until the brie is melted and the tomatoes are slightly browned at the top.

Let cool for 10-15 min. Serve with Tostitos Scoops!

P.S. Create a perfect bite by taking a Tostitos scoop, spoon a little bit of melted brie with basil pesto into the Tostitos scoop (I suggest you use a teaspoon for that), and top it with one roasted tomato. ENJOY!!!!!!
